Tasty Peanut Masala

Peanut masala is a peanut based spice powder often used in Indian cuisine. In North India peanut is widely used in daily cooking but peanut masala is somewhat different from the one we use at home when cooking with peanuts.

1)  Look for the freshness of the masala:   

Always prefer buying peanut masala that contains maximum peanuts and minimum coriander seeds and red chilli powder since these has no role to play in peanut masala.

2) Check if peanut masala is fresh or not?

Fresh peanut masala smells heavenly while the stale peanut masala will spoil your dish so check it out before buying peanut masala for your recipe.

3) Check the price of peanut masala:

If you are shopping peanut masala in bulk then always prefer buying discounted peanut masalas, even if they are expired. Reason being peanuts are cheaper than red chilli powder and coriander seeds which makes them ideal to be sold in large quantities at reduced price.

4) Soak peanuts in water overnight or microwave them for 1 minute before grounding into peanut butter/paste:   

Some brands add sugar instead of salt when making peanut butter/paste which makes peanut masala we cook at home different from the peanut masala we get in market. So always prefer soaking peanuts overnight or microwaving them for 1 minute before grinding them into peanut butter/paste so you can get peanut powder identical to peanut masala available in market.

5) Best store bought peanut masalas:

Refista peanut masala is my favorite since they add sugar instead of salt while making peanut butter/paste and their peanuts are very fresh. You can buy Refista peanut paste here .

6) Add peanut paste to hot oil, then add other spices:

  Always prefer adding a tablespoon of hot oil to ground peanut paste before adding coriander seeds and red chilli powder when making peanut based recipes at home. This way peanut paste will get more roasted and peanut masala you cook at home will be closer to the peanut masala available in market.

7) Roast peanut powder with ghee:

  Always prefer roasting peanut powder with ghee for peanut based recipes such as peanut butter/paste, peanut pulao or any other recipe requiring peanut masala. Peanuts roasted in ghee taste amazing! I always make lots of peanut powder every time I roast peanuts because it stores well for months when kept airtight. You can store roasted peanut powder in freezer for longer shelf life.

8) Mixing water while grinding peanuts into paste:  

Before making peanut paste add 1 – 2 of water while grinding peanuts into peanut butter/paste so peanut masala you get at home is water soluble and dissolves faster in dals, pulao or any other peanut based dish.
